The wonderful art of food preparation is equal to happiness. There is much freedom to be found in selecting perfect ingredients and turning them into mouth-watering sumptuous dishes.

As a young child attending a German boarding school in Africa, German food was the order of the day. This is what enhanced my curiosity about the ingredients used in those dishes. Pasta and bread were familiar and common, but the various combinations of flavors were unique to Germany.

Great childhood memories are evoked by the wonderful scent of an emulsion of extra virgin olive oil, apple cider and balsamic vinegar poured generously over lettuce – crisp Buttercup, Romaine and Radicchio –, a dollop of creamy golden mustard mixed into potatoes, and savory leek soup.

Many years and scrumptious recipe ideas later, my love for German and other exotic food has evolved into a journey of flavor, sharing, and the divine art of being a generous host to family and friends.

My very first trip to Germany was an education in community, friendship, hospitality, unspoiled beauty, rich history, and folklore. But one of the most important lessons was how to cook German food. On arrival night, I helped to cook Käse Spätzle. Of course, I got to eat it later, and it tasted even better than I remembered it from my childhood. If you haven’t tried it yet, the next time you’re in Deutschland, try a little Spätzle. Chances are you will love it a lot.

Käse Spätzle (Traditional German Dumplings) the easy cheat way:

Ingredients:

1 whole package Spätzle
2 large onions
3 tablespoons olive oil
⅓ cup milk
2 tablespoons butter
½ teaspoon nutmeg
2 tablespoons dried parsley (more for garnish)
salt and pepper to taste
½ lbs strong cheese (either shredded already or you grate it yourself)

Method:

Cook Spätzle according to package instructions, drain and set aside.
Cut onions into rings and cook in a large pan with olive oil over high heat until browned. Set aside.
Bring a large pot over high heat and add milk, butter, nutmeg, salt, pepper and parsley.
Add Spätzle and cheese and cook according to instructions.
Serve with onion rings on top.

Sprinkle a little parsley and eat!

If you prefer to make the Spätzle from scratch, here’s how:

Ingredients:

1 Cup all-purpose flour
½ Teaspoon Salt
2 Whole Eggs
¼ Cup Milk
½ Teaspoon Nutmeg
2 Tablespoons unsalted Butter
1 Pinch freshly ground White Pepper
1 Gallon Hot Water
½ lb strong Cheese
Fresh or dried parsley
Optional ingredient—Bacon

Method:

Mix together flour, salt, nutmeg and white pepper.
Beat eggs well, and add alternately with the milk and cheese to the dry ingredients. Mix well.
Press dough through spätzle maker, or a large holed sieve or metal grater.
Drop a few at a time into simmering liquid. Cook 5 to 8 minutes. Drain well.
Sauté cooked spätzle in butter or margarine in a pan (if preparing recipe with bacon, heat the cooked spätzle in bacon drippings—omit the butter).

Sprinkle parsley on top, serve and enjoy!
