I refer to “us” because some things have shifted, and you will soon discover what those changes are. Today, I am excited to be joined by an amazing friend, Solomon (Sol) Haven (this was during a time when I thought I would forge my own path, LOL). If you are sensing a glimpse of the future, you might just be right. This future is the magnificent Sunday meal we are about to create and savor together. Last week, I experienced this future—it is profoundly roasted, wonderfully creamy, citrus-kissed, and utterly divine.
In this recipe, we are going to unveil a culinary gem from a handwritten book that was gifted to me over forty years ago—yes, it is quite old! However, it holds food treasures that deserve to be shared and enjoyed by everyone who comes across them. I have personalized the recipes, much like they encourage auditioning hopefuls on that singing show to “make the song your own.” While we will not be singing in this recipe, the delightful results will certainly make you want to sing Hallelujah!

Sunday Soul Recipe Number 1:
Gratitude Gratin: A Comforting Bake of Broccoli, Potato & Almond Citrus Cream
A reimagined classic with layers of grace.
Ingredients:
- 1 lb broccoli florets, steamed (keep it slightly crisp)
- 3 medium potatoes, thinly sliced (Yukon Golds or baby potatoes are lovely)
- ¼ cup butter
- ⅓ cup slivered almonds
- 2 tbsp lemon juice
- 1 tsp grated lemon rind
- 1 cup cream (or a plant-based alternative)
- ½ cup grated cheese (mild cheddar, gruyère, or something soulful)
- Salt & pepper to taste
- Optional: pinch of nutmeg or fresh thyme for a fragrant finish
- A prayer of gratitude
Method:
- Preheat oven to 375°F / 190°C.
- Steam broccoli for about 10–12 minutes until vibrant but firm.
- Sauté almonds in butter over medium heat until golden. Add lemon juice, lemon rind, and a pinch of salt. Set aside.
- In a baking dish, layer potatoes and broccoli—like building a story. Pour almond-lemon butter over the layers.

Bonus Tip (Optional): We parboiled our potatoes in unsalted stock for two minutes, using a colander to maintain their shape and quickly drain them afterward. This parboiling process really enhanced the flavor. Feel free to select the mild flavored vegetable (or not) stock that you prefer.
And now, let us tackle the inevitable question that arises at every delightful Sunday gathering:
“What’s for dessert?!”
Naturally, we are thrilled to announce the official launch of our Sunday Soul Recipes Series! It feels only right to conclude this inaugural meal with a dish that not only delights the palate but also warms the heart. We are keeping with the theme: nostalgic, simple, and comforting, yet enhanced with a unique touch of sweetness. However, we are also introducing a creative shift that will transform our meal from “dessert” to “devotional.”

Soulful Sunday Dessert:
– Honeyed Pears with Cream & a Nutty Crumble
A quiet, elegant ending to a sacred meal.
Honeyed Pears Ingredients:
- 4 ripe but firm pears (Bosc or Anjou work well), halved and cored
- 2 tbsp butter (unsalted)
- 2–3 tbsp honey (or maple syrup)
- ½ tsp cinnamon
- Pinch of salt
- Whipped cream or Greek yogurt for serving
- A sweet prayer of love and gratitude
Method for Pears:
- Preheat oven to 375°F / 190°C.
- In a baking dish, place pear halves cut-side up. Dot with butter, drizzle with honey, and sprinkle with cinnamon and a pinch of salt.
- Roast your pears for 20–25 minutes until tender and golden.
- While warm, top each pear with a spoonful of nutty crumble (or granola or biscuit crumbles, if that is your preference.).

Assembly:

If you prefer not to make the crumble from scratch and would rather use granola or biscuits, here is a soulful twist:
- Substitute with ½ cup of granola or crushed digestive biscuits to achieve that delightful “crumble,” eliminating the need to sauté breadcrumbs. In case you are curious, we prefer to use fresh breadcrumbs or Panko as our main ingredient. We have not had the chance to experiment with Granola or digestive biscuits yet. Feel free to share in the reply section of this article if you have experimented with any of the substitute ingredients.
Tips:
- Sautéing the breadcrumbs will create that lovely “crunchy crumble” texture—butter helps the crumbs toast and become crispy.
- If you prefer a lighter feel, you can skip the butter altogether and toast the breadcrumbs dry in a non-stick pan—still delicious!
- The nuts and raisins add the chewy-sweet dimension you are after—no biscuits needed!
